Lamb Burger

Ingredients

  • 200 gm red bell peppers
  • 1/2 kg minced meat
  • 2 1/2 Tbsp peanut butter
  • 2 Tbsp chopped garlic
  • 2 Tbsp soya sauce
  • 100 gm roasted cashew nuts
  • 3 Tbsp chopped coriander
  • 2 green chillies - seeded and chopped
  • 3 Tbsp fresh breadcrumbs
  • Oil for frying
For Satay Sauce:
  • 4 Tbsp sweet chilli sauce
  • 3 Tbsp peanut butter
  • 250 ml chicken stock
  • 60 ml coconut cream
  • 1 Tbsp lemon juice
  • 2 Tbsp chopped coriander

Method

  1. For the burgers, deseed and quarter the peppers.
  2. Grill until the skin blackens. Peel away skin and chop the peppers.
  3. Combine with remaining burger ingredients. Blend and shape into patties.
  4. Chill for 30 minutes.
  5. Shallow fry in hot oil until cooked through.
For the Satay Sauce:
  1. Combine the ingredients in a pan.
  2. Bring to a simmer while whisking until thickened.
  3. Stir in coriander.
  4. Season and serve with the burgers.
