Savour Pulao (or Pilaff)



  Ingredients

  • Rice 5 cups
  • Chicken 12 pieces
  • All spice 1-1/2 tsp
  • Green chilli (chopped) 4
  • Onion (sliced) 2
  • Tomato (sliced) 4
  • Vinegar 2 tbsp
  • Garlic 1 tbsp
  • Ginger (julienn) 1 tsp
  • Salt 2 tbsp
  • Red chilli 1-1/2 tsp
  • All spices leveled 1 tbsp
  • Ghee 1 cup
  • For Stock
  • Fennel seed 1 tbsp
  • Bay leaves 2
  • Whole coriander 1 tbsp
  •  

Cooking Directions

For Stock: 
  1. In a pan put 4 pieces of chicken with 4 cups of water.
  2. Make pouch/potli of fennel seed, bay leaves and whole coriander add in pan cook for 15-20 minutes.
  3. Marinate chicken with 2 tbsp vinegar and 1 tsp of salt for 1/2 an hour.
  4. In a pan put ghee and fry marinated chicken and chicken stock very well.
  5. In another pan heat 1 cup oil and fry onion slices till brown.
  6. Now add tomatoes and some water cook untill oil appears in a layer form.
  7. Add chicken julienns and fried chicken, cook more then add stock.
  8. When stock boils add green chillies and all spices.
  9. Add rice and cook untill water dries.
  10. Cover with lid and let remaining rice be cooked with steam on a very low flame, (that is give 'dum' to rice).
