 Ingredients

  • Bitter-gourd ½ kg
  • Salt 1 tsp
  • Tamarind 3 - 4 pieces
  • Oil ½ cup
  • Ginger garlic paste 1 tsp
  • Chili powder 1 tsp
  • Turmeric ½ tsp
  • Yogurt ½ cup (beaten)
  • Onion 1 cup
  • Sugar 1 tsp heaped
  • For Achaari Masala:
  • White cumin 1 tsp heaped
  • Onion seed 1 tsp
  • Fenugreek seed ½ tsp (dried)
  • Coriander seeds 2 tsp
  • Fennel seeds 1 tsp

Cooking Directions

1.      For Achari Masala: Roast all slightly on tawa and grind coarsely.
2.      Scrape bitter gourd, take out seeds, cut into thick pieces, rub with salt and leave it in the sun for 1 hour.
3.      Wash well and boil for 5 minutes in water with tamarind pieces.
4.      Squeeze out all water and fry karela in oil, remove.
5.      Heat oil fry onion light golden and remove.
6.      Add ginger garlic paste, chili powder, turmeric and salt with yogurt and fry bitter gourd.
7.      Then add brown onion, sugar and roasted and grind achaari masala.
8.      Cover and cook on medium flame till done.
